Tea Variations

These recipes are variations on the Earl Grey Cupcakes and actually this recipe is amongst the most versatile recipes in the entire book. You could use any tea you fancy - be that posh white teas or PJ tips.

Passionfruit Tea Cupcakes & Peppermint Tea Cupcakes 

The key is to steep the tea bags first, in boiling water for the sponge and then in the milk for the frosting.

I really enjoyed the Earl Grey Cupcakes, but the peppermint cupcakes were a little strange. The passionfruit ones were a lovely and I would definitely use fruit tea again as I certainly always have it to hand and with boxes being as cheap as 49p it isn't expensive to buy SPECIFICALLY to bake.
