Mocha Cupcakes


I'm turning myself in. I have murdered my Kenwood. Being overworked by myself this year, means that my trusty Kenwood has given up after 50 years of life! She's a retro, but finally the tropper has packed it in. Lucky I have a back-up and managed to finish off the frosting. I'm hoping the specialists can replace her motor as I've become quite attached this year. I confess that the mayhem below is the normality when I bake.


Back to the Mocha Cupcakes... This recipe starts by making yourself a strong mocha. Don't be tempted to take a sip.


...Make up the batter. It's worth resisting!





These are a gorgeous and the flavour is not overpowering or too rich, which is fab, as coffee cakes and chocolate cakes can often be 'just a bit too much'.

I treated myself to some new piping tips from lakeland and gave each cake a generous mocha topping. This was using a big * shape nib and made a beautiful rose type effect. If you're piping you may need to add just a splash more milk to Hummingbird's frosting recipes.
